  1. In a bowl, beat the eggs with salt and pepper.
  2. Heat butter or oil in a non-stick skillet over medium heat.
  3. Pour in the beaten eggs, tilting the pan to spread them evenly.
  4. Cook until the edges start to set, then gently lift the edges with a spatula.
  5. Add any optional fillings on one half of the omelette.
  6. Fold the omelette in half and cook for another minute until fully set.
  7. Slide onto a plate and serve hot.
